Alpine (or malga) cheese is made from the milk of cows reared on mountain pastures. In this area, the animals are in excellent health, resulting in cheeses of higher quality, better consistency and unmistakable flavour.

Blu di Bottera del cunese

Blu di Bottera is a famous cheese from Cuneo, unmistakable to the eye for its mould and blue veins, with a soft creamy centre and a sweet flavour typical of mouldy cheeses.

Il Castelmagno

Castelmagno is a dry, grainy, crumbly cheese. Its flavour is mild and delicate, becoming increasingly bitter and almost spicy as it matures.

Testun al barolo

Testun al Barolo is an Alpine cheese made in the Piedmontese Alps using cow’s and goat’s milk. It has a grainy white paste. Its flavor is rich, strong and floral, enhanced by its maturation in Nebbiolo pomace.

Fiocco di prosciutto is made from the leg of pork. The difference from others products is in the cut, which is more valuable and tastier.

Coppa piacentina

Coppa Piacentina comes from the neck of the pig. It is an Italian D.O.P. (denomination of protected origin) cured meat, characterized by its “sweetness”, which requires a limited amount of salt.

Mocetta di cervo

Mocetta di cervo is a product made using only the legs, which are left to macerate for several days with salt, spices and wine vinegar.
